For those who remember Altiris (now Symantec), they used to have a tool called RapidInstall which worked great for what I'm describing. The benefit of a self-extracting EXE is I can hand it to the service desk as a simple deployment tool. I know that WinRAR's SEE feature has a function where you can run scripts before/after and also create desktop shortcuts but I have to imagine there are tools out there for this - other than writing a script of course. This is just an example, I realize it makes no sense but hopefully you get my drift.
